Our favourite recipe: Pancakes with Salsa

Pancakes with Salsa is the perfect lunch or afternoon treat for the whole family! Taking only 10 minutes to cook and free from sugar these pancakes are the perfect, easy meal. Our favourite part is that you can get the kids involved by planting and caring for the herbs (hidden greens), also gets them to discover new flavours!

Serves: 2

Time: 10 Minutes


1 cup plain wholemeal flour

1 cup water
2 spring onions, finely sliced

1 tomato, diced

1/4 red onion, finely diced

1 cloves garlic, crushed

3 tbsp fresh basil leaves, shredded

1 tbsp extra virgin olive oil


Combine our, most of the water and the spring onions. Whisk to form a smooth batter, adding a little more water if needed to reach a smooth consistency. Set aside while making salsa.

Combine tomato, onion, garlic and basil and set aside.

Heat half the oil in a frying pan over a medium heat. Pour in 1⁄4 cups of the pancake batter to form 2-3 pancakes per serve. Cook for a few minutes, until bubbles form on the surface, then ip and cook for another minute or two on the other side. Repeat with remaining oil and batter.

Serve 2-3 pancakes topped with the salsa per person.
