In a bowl, whisk together flour, milk and egg
Heat half the oil in a frying pan over a medium-high heat. Pour in half of the crepe batter & swirl to form a layer over the bottom of the pan.
Cook for 1-2 minutes on each side, until golden. Set aside.
Repeat with the remaining oil & batter so you have two crepes.
While the crepes are cooking, combine the cream cheese & vanilla.
Spread the vanilla cream cheese over each crepe & sprinkle with coconut. Place strawberry slices over the crepe & roll up to serve.Download our FREE Meal Plan
Combine yoghurt with chilli paste, lemongrass & garlic. Coat chicken in the yoghurt mix, cover & set aside in the fridge to marinate for an hour.
When ready to cook, preheat the oven to 200C & line a tray with baking paper. Place the chicken pieces on the tray and bake for 30-45 minutes.
Combine the cabbage, carrot, parsley, spring onion, currants, orange juice, olive oil & apple cider vinegar to form the salad.
Toss together and season with salt and pepper.
Serve the chicken drumsticks alongside the salad.
Cook pasta, drain and set aside some of the cooking water.
While pasta is cooking, heat the oil in a frying pan over medium-high heat. Add the onion & sauté for a minute or two.
Add the chicken pieces & garlic – cook for another couple of minutes.
Add the paprika & thyme. Stir through to coat the chicken.
Add the cottage cheese & spinach, cooking for another few minutes, until the chicken is cooked through & the spinach has wilted.
Add the pasta and toss to combine well. Season with salt and pepper and serve.
Soak raisins in the rum for 10 minutes.
Heat coconut milk, half the cocoa/cacao powder and the dark chocolate in a microwavable cup for a minute.
Stir contents until smooth and heat for a further 30 seconds to a minute until warm and runny. Set aside.
Combine raisins, rum, flour, baking powder, Natvia, remaining cocoa/cacao, vanilla extract and water. Place in an individual ramekin (one per serve).
Microwave on high for 90 seconds.
Serve immediately drizzled with the chocolate sauce.
